Bright Blueberry Muffin Bites Recipe
This low-sugar dairy free, gluten free and refined sugar free blueberry muffins are moist, fluffy and oh so easy to make!
INGREDIENTS
3 extra large eggs
2 cups extra fine almond flour
1/2 tsp baking soda
1/4 tsp natural sea salt - I love the duxbury salt from Saltery!
1/4 cup maple syrup
1/4 cup melted coconut oil
1 tbsp vanilla extract
1/4 cup lemon juice
1.5 cups fresh blueberries
METHOD
Crack the eggs into a large mixing bowl and whisk gently until the yolks are broken.
Add each additional ingredient in order (stopping before the berries are added), mixing with the whisk after each ingredient is added to the bowl
Add the berries and gently fold in them into the batter using a spoon or spatula
For mini muffins:
Scoop in 48 lined mini muffin tins and bake at 350° for 19-22 minutes
