Caramelized Onion Strips

INGREDIENTS 4 cups sliced sweet onion

1 tbsp olive oil

to taste flaky sea salt - I love SALTERY's Duxbury Salt!

METHOD Slice off the open/top end of the onion and remove the outer peel.

Place the flat part of the onion down on a  cutting board and slice the onion in half lengthwise along the root.

Place the widest, flattest part of the onion (the middle section) halves down on the cutting bord.

Slice into 1/4” strips, discarding the root of the bulb.

Place the sliced onion in a covered pan over medium heat.

Sprinkle with a generous pinch of sea salt.

Cover and let cook for about 20 mins, stirring occasionally, to ensure even browning.

Once the onions have softened and begun to turn a shade of golden brown, reduce the head to medium-low, add 1 tbsp olive oil and another generous pinch of salt, and continue cooking for about 20-30 minutes, or until all of the onions are fully caramelized.

If there is any excess liquid in the pan, just uncover the pan and continue cooking for a few minutes until the excess liquid is cooked off.

Season to taste with additional sea salt.
