Zucchini Fritter Bites- dairy free : gluten free : refined sugar free : paleo : vegetarian

zucchini is packed with many important vitamins, minerals, and antioxidants. It has a high fiber content and a low calorie count.

natural sea salt is full of necessary nutrients and trace minerals that play an essential role in many of our body's vital functions, including nerve function and mental health.


garlic has been used as a performance enhancing substance since ancient Rome, and has been shown in studies to reduce fatigue and increase stamina.


almond flour contains vitamins, minerals, and antioxidants that can provide important benefits such as heart health, digestive health, and diabetes control. It is also an excellent source of iron and calcium.


INGREDIENTS


3 large zucchini

1 sweet onion

1 1/4 cup almond flour (packed cups)

2 tsp garlic (crushed)

1 tbsp oregano

2 tsp flakey sea salt - I love SALTERY's Duxbury Salt!

2 large eggs


METHOD


Using a food processor or blender, chop zucchini blend until chunky paste forms. Let rest in a colander over the sink until most liquid had drained (press gently if needed).


Using a food processor or blender, chop 1 large sweet onion and blend until chunky paste forms. Add to colander and let rest.

Transfer to bowl.


Add almond flour, 2 large eggs, crushed garlic, oregano, and SalterieOne sea salt.


Scoop 1 tbsp of mixture and roll into balls, placing them at least 1" apart on the pan.

Bake @ 450 for 25-30 minutes, until golden and firm.
