Latin Lamb Meatballs
INGREDIENTS 1 jumbo pasture raised egg
1 pound ground lamb
1/4 cup minced sweet onion
1/4 cup minced parsley
1/4 cup minced red bell pepper
1 tbsp grated garlic
1 tbsp chopped oregano
1 tsp cumin
1 tbsp flaky sea salt - I love SALTERY's Duxbury Salt!
garnish vegan cotija cheese + herb sauce (optional)
METHOD Combine all of the ingredients in a food processor or mixing bowl.
Vigorously mix the ingredients until an even, paste-like consistency is formed.
If the mixture still seems too loose to form in to balls at this stage, just put it in the fridge until it has firmed up a bit.
Form the mixture into 16 or 32 evenly sized balls.
Place the balls on lined or lightly oiled baking sheet, with at least 2 inches between each piece.
For 16 pieces: Bake at 425 for 10-12 minutes
For 32 pieces: Bake at 425 for 7-9 minutes
