Lemon Herb Shortbread Cookies- dairy free : gluten free : refined sugar free : paleo : vegan

The traditional, simple shortbread cookie with a touch of lemon will fulfill that sweet and sour tooth craving in so many ways!


lemon juice is an excellent source of vitamin c and has health promoting effects such as lower blood pressure, cancer prevention, aids in digestion and weight loss, and clears skin.

lemon zest contains fiber, vitamin, and antioxidants that may support oral, immune, and heart health.


almond flour contains vitamins, minerals, and antioxidants that can provide important benefits such as heart health, digestive health, and diabetes control. It is also an excellent source of iron and calcium.

maple is rich in antioxidants and full of minerals that are good for bone health, lower cholesterol and promote better brain health.

coconut oil contains many nutrients that contribute to a healthy diet, and are full of fatty acids that your body needs. It may help improve metabolism, cognitive function, and hair & skin health.

natural sea salt is full of necessary nutrients and trace minerals that play an essential role in many of our body's vital functions, including nerve function and mental health.



INGREDIENTS

4 cups almond flour

3/4 cup maple

1/2 cup coconut oil (melted)

1/2 tsp flakey sea salt - I love SALTERY's Duxbury Salt!

1 tsp lemon zest (packed)

1 tsp lemon juice

optional fresh thyme sprigs


METHOD


Mix all of the ingredients until an even consistency is formed.


Roll into 48 1" balls and place on a greased cookie sheet.

Press with a second sheet to 1/4".

Poke 9 holes in each cookie.


Gently press a snipped sprig of fresh thyme into the cookie.

Bake @ 300 for 10-15 minutes.


Let cool down and enjoy!
