Simple Shortbread Cookies- dairy free : gluten free : refined sugar free : paleo : vegan

There's nothing quite like the traditional shortbread cookie recipe in its purest form, and simply crafted with just four clean ingredients.


almond flour contains vitamins, minerals, and antioxidants that can provide important benefits such as heart health, digestive health, and diabetes control. It is also an excellent source of iron and calcium.

maple is rich in antioxidants and full of minerals that are good for bone health, lower cholesterol and promote better brain health.


coconut oil contains many nutrients that contribute to a healthy diet, and are full of fatty acids that your body needs. It may help improve metabolism, cognitive function, and hair & skin health.


natural sea salt is full of necessary nutrients and trace minerals that play an essential role in many of our body's vital functions, including nerve function and mental health.




INGREDIENTS

4 cups almond flour

3/4 cup maple

1/2 cup coconut oil (melted)

1/2 tsp flakey sea salt - I love SALTERY's Duxbury Salt!


METHOD


Mix all of the ingredients until an even consistency is formed.


Roll into 48 1" ball and place on a greased cookie sheet.

Press with a second sheet to 1/4".

Poke 9 holes in each cookie.

Bake @ 350 for 15 minutes.


Let cool down and enjoy!
