Sweet Potato Toast- dairy free : gluten free : refined sugar free : paleo : vegan

This crunchy and savory version of a healthy toast sure hits the spot while packing your body with a ton of nutrients! It is so satisfying that you won't even crave that bagel anymore.

sweet potatoes are a good source of magnesium, a nutrient that supports a variety of vital functions including nerve, muscle and mental health.

kale has so many health benefits and is packed with vitamins and minerals that help strengthen the immune system and have anti-inflammatory benefits.


coconut oil contains many nutrients that contribute to a healthy diet, and are full of fatty acids that your body needs. It may help improve metabolism, cognitive function, and hair & skin health.


natural sea salt is full of necessary nutrients and trace minerals that play an essential role in many of our body's vital functions, including nerve function and mental health.



INGREDIENTS


1 sweet potato (5-6")

2 tbsp coconut oil

1 tbsp sea salt

kale

optional:

watermelon radish

bee pollen


METHOD


Cut a 5-6" sweet potato into 1/2 thick slices lengthwise and place into a large baggie with sea salt. Toss to coat evenly.


Place on a baking sheet with at least 2" between pieces and roast at 450 for ten minutes (or until tender), turning halfway through cooking time.


Top with kale massaged with Clean Tahini Dream Dressing + watermelon radish + bee pollen (optional)
